Strawberry cheesecake



*Ingredients

°1 puff pastry sheet, thawed
+strawberry filling:
°1 cup strawberries, sliced
°Half a cup of sugar
°Half a cup of lemon juice
+Cheese filling:
°1 8-ounce pack cream cheese, soft
°Half a cup of granulated sugar
°2 tablespoons of heavy cream
+strawberry layer:
°1 cup strawberries, sliced
°Half a cup of powdered sugar

Preheat oven to 400 degrees F.
Lay out a sheet of puff pastry on a lightly floured cutting board.
Cutting pastry sheet into 3 strips along fold marks. Then cut each strip in half, making 6 rectangles.
Place each rectangle of pastry on a parchment-lined baking sheet.
Bake for 15 minutes or until the pastry is golden brown.

Combine strawberries, sugar, and lemon juice in a small saucepan over medium heat.
Puree the mixture with a puree until the strawberries are soft and the sugar has dissolved.
Increase the heat to high and bring the mixture to a boil. Boil for 5 minutes, or until thick.

Cheese filling:
Beat the cream cheese, sugar, and cream together until smooth, about 3 minutes, using a hand mixer.

Pour the cream cheese mixture over a layer of strawberry slices.
