Lemon Berry Bread!




*Ingredients


°1/3 cup melted butter
°1 cup of sugar
°3 tablespoons of lemon juice
°2 large eggs, at room temperature
°1-1/2 cups all-purpose flour
°1 teaspoon baking powder
°salt 1/2 tsp
°1/2 cup 2% milk
°1 cup of fresh or frozen blueberries
°1/2 cup chopped nuts
°2 tsp grated lemon peel.
+Glaze:
°2 tablespoons of lemon juice
°1/4 cup of sugar..
 
*Directions

1. In a large bowl, whisk together the butter, sugar, lemon juice, and eggs. Combine flour with baking powder and salt; Stir in the egg mixture alternating with the milk, beating well after each addition. Add blueberries, nuts, and lemon zest.
2. Transfer to a greased 8" x 4" square. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the middle comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
3. Combine the glaze ingredients. Sprinkle on warm bread.
