Lemon Meringue Pie




* Ingredients / enough for 8 persons:

+ short pastries
°150 grams of soft sugar
°3 eggs
°40 cl of milk
°40  butter
°30g flour (3 tablespoons)
°20g cornstarch (2 tablespoons)
° Squeezed lemon juice and its skin

*Preparation 

1- Preheat oven 8 for about 10 minutes. Meanwhile, separate the yolks from the whites into two bowls. Mix the yolks, then add half the sugar, the flour, the cornstarch and the lemon zest, and mix everything together.
2- Heat the milk and pour it until it boils over the product, stirring well so that no lumps form. Add the butter in pieces.
3- Cook the dough for 10 minutes without letting it brown.
4- When the dough is ready, lemon juice is added to prepare it as you decorate the pie dough. Always bake on medium-high for 20 minutes on thermostat 6/7.
5- Meanwhile, beat the egg whites very hard, then add the other half of the sugar and beat again for a minute or two.

Add the meringue to the pie and cook very gently (thermometer 3/4) for 15 minutes.
