Slow cooker beef bourguignon



*Ingredients:

°5 slices of finely chopped bacon
°3 lbs. Cut the boneless beef chuck into 1-inch cubes
°1 cup red wine for cooking
°2 cups of chicken broth
°1/2 cup tomato sauce
°1/4 cup soy sauce
°1/4 cup flour
°3 garlic cloves, 
°2 tablespoons of finely chopped thyme
°5 medium carrots, cut into slices
°1 pound of small potatoes I used tri-color
°8 oz fresh mushrooms
°Freshly chopped parsley for garnish

*Preparation :

In a large skillet, cook bacon over medium-high heat until crispy. Place the bacon in the slow cooker. Salt and pepper the meat, add to the pan and sear on each side for 2-3 minutes. Transfer the beef to the slow cooker.
Add the red wine to the skillet, scraping up the browned bits on the side. Let it simmer while reducing the chicken broth, tomato sauce, and soy sauce and add slowly. Slowly whisk in the flour. Add the sauce to the slow cooker.
Add garlic, thyme, carrots, potatoes, and mushrooms to the slow cooker. Stir well and simmer until meat is tender 8-10 hours or high for 6 Garnish with fresh parsley and serve with mashed potatoes if desired.
